22nd May 2011 - Edinburgh Marathon - Charlotte and Hannah Johnson (MD and waitress) completed the Edinburgh Marathon in aid of the National Autistic Society! They finished in a time of 4 hours and 29 seconds - well done both of you! Up to now they have raised £1500 for this worthy charity. If anyone wants to sponsor Charlotte please Click Here

April - We held a charity coffee morning in aid of Multiple Sclerosis and raised over £1200! Thanks to all those who attended.

2nd April - We have received planning permission to open at lumchtime during the week. Watch this space!

22nd March - We have won the One Oldham Business Awards Startup of the Year Award! Well done to all the staff at Fresca and a particular thanks to you, our customers, for all your support and without whom we wouldn't have a business!

14th March - Mother's Day was a great success with 325 people served!

20th February - This is starting to get predictable but we're not complaining! 225 people served today. Thank you all for your support.

Valentines Menu will be available all weekend, Friday, Saturday and Sunday the 12th, 13th and 14th February. We are nearly fully booked for the Saturday but have tables left Friday and Sunday!

23rd January - Only for it to be beaten one week later with 189 people served!

16th January - It was our busiest day ever at Fresca with 180 people served! Everyone is loving the New Menu!

6th January - The car park has been cleared of snow!

4th January 2010 - New Executive Chef joins the Fresca team! Fresca are delighted to announce the addition of Sean Carberry to lead our catering team. Sean was head chef at the Bella Collina and a number of other leading restaurants in Manchester before opening his own restaurant Pzazz in Bramhall. Joining Fresca as Executive Chef, Sean will help further develop the Fresca brand with particular emphasis on leading the catering staff to develop the menu and the type of food our customers demand.

20th December - Childrens Entertainer and Magician Mr Tinsel will be at Fresca. Don't tell the kids but there may well be some reindeers parked in the car park that day!

19th November - Kim was back at Fresca and once again performed beautifully. See Video... of Kim from the 19th November at Fresca. It's not every day you get the chance to see someone of this talent performing live at a local venue.

16th November - Out first ever Taster Evening was a resounding success with over 40 people booking for it! Nathan Fiske, a wine expert from our importers, was as enthusiastic as always in sharing his considerable knowledge on the wines and how they can compliment the food. Click Here to see the Video. 5th November - Kim Howlett sang live at Fresca. Wow - what a voice! This was a very classy performance from an amazing talent. For those of you who missed it click on the video link to see how good she is! Compliments to Paul too on his piano playing. Kim will be performing again on the 19th November. See Video ...

14th October - We had a visit from the girls at Estcourt Preparotary School in Oldham. They have been doing a school project on world kitchens and wanted to come and visit a restaurant and learn about what is involved in cooking for so many people and running a restuarant business. The girls were very enthusiastic and, true to their word, they did not break anything! They were a joy to have in the restaurant and so well behaved. They had a session with Matt, our head chef, and even made their own pizzas! They will be setting up a smoothy stall as part of their project and we wish them every success in their venture. 8th October - Kim Howlett will be singing at Fresca on Thursday 29th October. She came over to Fresca on Wednesday 7th October, loved the place and agreed to sing on Thursday 29th October.

5th October - We're talking to Kim Howlett about singing at Fresca. Kim made the last 6 girls on X Factor in 2007 and went to Sharon's house in LA. She has an amazing voice! Watch this space for an update!

27th June - Our updated Menu is now available. Click Here

23rd June - For those of you who have been in since we opened you will know that we have handed out feedback forms. We have been collating these and will publish the results shortly. We have already taken notice of your feedback and as a result we are changing the menu slightly to include staples such as Lasagne and Cannelloni.

20th June - It's nearly three weeks since we opened and we are fully-booked for this Saturday night. We have had to turn people away who have not booked in advance. Please book for Friday and Saturday evening to avoid disappointment!

11th June - Things are going well - people seem to be enjoying the Fresca experience and we have added an online registration page to register your details for offers and promotions.

1st June 2009 - We are officially open to the public! Please come and give us a try!

28th May 2009 - We had a 'soft opening' for family and friends and suppliers tonight. It was good practise for the staff and we got some good positive feedback from our guests. See Video ...

23rd May 2009 - OK, It's getting really exciting now! The building work has finished, the furniture is in, the gas is on, the chefs are practising, the first food has been cooked, the bar top is on, the wine has been delivered and the wine wall is nearly full! See Video ...

16th May 2009 - The pizza oven has been tiled, the bar is progressing, the kitchen is well on the way and we've been testing the sound system. See Video ...

13th May 2009 - Our license has been granted! We had some complaints initially from some local residents but we met with them and reassured them of the kind of establishment that Fresca is going to be.

12th May 2009 - The kitchen equipment has arrived and is starting to be fitted!

5th May 2009 - The wine wall is up behind the bar! The tiled flooring is down at one end of the room and the wooden floor is down but covered up to protect it. The walls are painted. Oh yes - and the toilets are tiled and so is the whole of the kitchen. See Video ...

28th April 2009 - The booths are being covered, the pizza oven has been skimmed, the kitchen is being tiled and the walk-in fridge is in. See Video ...

25th Feb 2009 - The company Fresca Restaurants Ltd is incorporated.

24th Feb 2009 Mat Stephany appointed as Head Chef. Mat formerly worked at L'Enclume, a Michelin starred restaurant in the Lake District.

8th Dec 2008 - Name agreed on - Fresca Restaurant. It is the Italian word for fresh and represents what we stand for. Also a good concept to build the brand.
